More Hen of the Woods

I had to walk farther back into the forest this time, 
but I found another nice Hen-of-the-woods.

When I brought it in to show to Monica,
a little red-backed salamander jumped out.

I put the salamander back outside.

So what should we do with the mushroom?

    1. The first dish, Monica cooked the mushroom up with some garlic and onions, added some eggplant and grass-fed ground beef. (It wouldn't have occurred to me to add eggplant, but it was perfect.) Delicious and hearty served over rice. On the second day I tore the mushroom up into individual fronds, rubbed it all with olive oil, salt and pepper and roasted it alongside potatoes and cauliflower. Also delicious, served with a glass of Murphy's Irish Stout. By then we were mushroomed out, so the last quarter of it I tore up and froze. I had read somewhere that it stands up to that pretty well, so we'll see.
